Sensory Analysis
FNDH 701 - Class Number: 14517
Description:
Evaluation of the methods to solve typical sensory problems by using simple difference and scaling tests will be emphasized. The course provides an awareness of differences in analytical and consumer product testing for obtaining data from human subjects. Appearance,textural and flavor characteristics of food will be assessed and data interpretation methods reviewed through the use of some mini-lab experiences.Sensory analysis of appearance, texture, aroma, flavor; physiology of sensory receptors; laboratory and consumer panels; and interpretation of data.
Permissions:

Student Requirements:
- Internet access
- Students are expected to perform lab experiments using instructions provided.
- Students must develop a sensory study to complete the course.
Prerequisites:
- Needs one course in statistics
