Advanced Food Chemistry

FDSCI 815 - Class Number: 14191

Description:

Relationship of chemical composition to properties and to physical and chemical stability of foods. Chemical reactions will be covered extensively. Special attention will be given to dairy and poultry products, red meats, vegetables and cereal grains.

  • FDSCI courses may require a proctor when taking exams.
  • Global Campus: Graduate students must be admitted to the Food Science Master's (MFDSC). Enrollment restriction to students admitted to a Global Campus (online/distance) program.
