Flavor Chemistry
FDSCI 711 - Class Number: 14864
Description:
Covers the use and evaluation of flavor reactions and flavor chemicals used in food systems. The impact of fat, carbohydrates, proteins, and texture on foods, as well as other key topics such as ingredient sources for flavorings, regulating agencies, analytical tools and instruments used by flavor chemists are presented.

- Recommended prerequisite: CHM 350 or 550 or a course in Organic Chemistry.
- Recommended prerequisite: FDSCI 501 or a course in Food Chemistry.
